Ok, when I first saw the Knight rifle I just purchased, I thought it was a musket nippled breech plug. After disassembling the rifle and pulling the the breech plug, that is not the case. Is this the breech plug that uses the red plastic disks for 209 primers?

Yes. Personally I've used both and prefer the standard BP, and #11 nipple. The newer std BP's for that rifle have a hex head like the one you have shown, so its removeable without a special BP tool. The old style have a slot, and you have to have a BP tool.
